Milho Frito (Deep Fried Corn Flour Porridge)

One of our favourite accompaniments are these crispy cubes of delight. First a porridge is made with corn flour, garlic and some shredded cabbage. When cooked it is set to cool in trays and then sliced into cubes that are then deep fried.

A local tradition on birthdays or get togethers is to go a restaurante for a espetada which is always served with a piping hot tray of crunchy milho frito and a simple fresh salad of lettuce, tomato and onion.
