Bolo de Mel (Sugar Cane Honey Cake)
This cake is a monument to our history as it has ingredients from all four corners of the world: the fruit and nuts from Africa and South America, the spices from India and China, all melded together with our luscious and rich sugar cane honey, which is what we call molasses.
Traditionally, families bake dozens of them on the 8th of December which is the day of Our Lady of Conception, this is also the official date to begin Christmas celebrations.
